    1. To make rhubarb simple syrup: Chop up fresh (or frozen) rhubarb stalks. Bring all ingredients to a boil, then reduce heat to low. Cook until rhubarb is falling apart (20-25 minutes). Remove from heat, strain and store in the fridge for future cocktails.
    2. Combine all ingredients in a shaker with ice. Shake and strain into a chilled martini glass.
